KOMPAS.com - Tahu merupakan salah satu bahan masakan yang dapat diolah menajdi beragam makanan. Salah satu olahan tahu yang simpel dan mudah dibuat yaitu pepes tahu.

Selain enak, sajian pepes tahu juga sehat karena proses memasaknya dikukus dan tidak ada minyak goreng.

Bahan pepes tahu:

  • 100 gram tahu putih
  • 1 ikat kemangi
  • Daun bawang secukupnya (iris-iris)
  • 1 butir telur
  • 3 siung bawang merah
  • 3 siung bawang putih
  • 2 butir kemiri
  • 1 sendok teh garam
  • Seperempat sendok teh kaldu bubuk
  • Daun pisang secukupnya
  • 2 sentimeter kencur
  • 2 sentimeter lengkuas
  • 2 buah cabai merah keriting
  • 2 buah cabai merah teropong
  • 1 sendok makan ebi kering (haluskan)
  • 3 tangkai kemangi (ambil daunnya)

Cara membuat pepes tahu:

1. Haluskan bawang merah, bawang putih, cabai merah keriting, cabai merah teropong, lengkuas, kemiri, dan kencur, lalu sisihkan untuk bumbu halus.

2. Hancurkan tahu putih menggunakan garpu hingga merata, kemudian tambahkan irisan daun bawang, dan bumbu halus. Aduk hingga semua bahan tercampur rata. 

3. Tambahkan ebi lalu aduk kembali hingga tercampur rata, setelah itu tambahkan daun kemangi dan telur lalu aduk hingga tercampur rata. Koreksi rasa dengan tambahan garam dan penyedap makanan.

4. Siapkan satu lembar daun pisang lalu masukkan dua hingga tiga sendok campuran tahu ke dalam daun pisang. Masukkan satu buah cabai rawit di atas campuran tahu lalu bungkus rapih isian pepes menggunakan tusuk gigi.

5.  Kukus pepes tahu di dalam kukusan yang sudah mendidih hingga matang, lalu angkat dan sajikan.
