Beberapa daerah di Indonesia memiliki sajian mie ayam yang khas. Misalnya mie ayam Jakarta yang dikenal dengan mie yamin serta Yogyakarta yang khas dengan mie ayam wonogiri.

Meski sama-sama bernama mie ayam, tetapi sajian dari dua daerah tersebut berbeda.

Resep mi ayam ala abang penjual

Bahan:

  • 300 gram mi telur, rebus sampai empuk
  • 6 sdm minyak ayam bawang
  • 3 sdt kecap asin
  • 2 ikat sawi hijau, celup sebentar ke air mendidih, angkat, sisihkan

Bahan topping mi ayam (tumisan ayam ceker):

  • 250 gram daging ayam, potong dadu
  • 6 buah ceker yang sudah direbus
  • 1 batang daun bawang besar, potong-potong
  • 2 lembar duan salam
  • 1 batang serai, geprek
  • 6 sdm kecap manis
  • Garam, merica, dan kaldu bubuk sesuai selera
  • 250 ml air

Bumbu halus:

  • 7 siung bawang merah
  • 4 siung bawang putih
  • 2 cm jahe
  • 2 cm kunyit
  • ½ sdt ketumbar bubuk

Bahan minyak ayam bawang:

  • 150 gram kulit ayam
  • 100 ml minyak
  • 6 siung bawang putih, cincang

Bahan pelengkap:

  • Sup pangsit
  • Pangsit goreng
  • Saus tomat
  • Sambal rawit
