The Adrienne Arsht Center has tweaked the name of its posh restaurant since hiring acclaimed chef Brad Kilgore as the culinary director.
Kilgore is co-owner of Alter in Wynwood, a James Beard Award semifinalist and a 2016 Best New Chef of Food & Wine magazine.
“I wanted to be part of something great, something bigger than myself or my food,” he says. “There are so many creative people involved in the process of putting just a single show on. It will continue to inspire the food.”
Signatures of the French-based European cuisine, on the second floor of the Ziff Ballet Opera House, include whipped clam chowder with black truffle butter ($17), heirloom tomato with chili vinegar-compressed watermelon ($16), three-day beef rib with smoked horseradish ($38) and Maine lobster with acorn squash custard and harissa anglaise ($39).
“Every dish has some sort of connection or route to a classic, which is why I call the cuisine ‘classics redefined,'” Kilgore says.
An artistic finale stars Chevre Cheesecake ($10) and key lime cube with passion fruit and toasted merengue ($11).
