ENTREE
4 tablespoons vegetable oil
2 onions, sliced
4 cloves garlic, crushed
1/2 seven-pod pepper, cored, seeded and diced*
3 tablespoons curry powder
1 teaspoon Garam Masala (recipe given)
1 (3-pound) whole chicken, cut into pieces
2 teaspoons salt
1 pound all-purpose potatoes, peeled and cut into 1-inch pieces
3 1/2 cups water
8 scallions, chopped
Heat vegetable oil in a deep skillet over medium heat. Add half the sliced onions and all the garlic and peppers. Saute 1 minute. Stir in curry powder and Garam Masala. Cook 1 minute. Add chicken pieces and salt. Cook 2 minutes more. Add potatoes and water, cover, and bring to a boil. Reduce heat and simmer 30 minutes or until chicken is cooked through. Garnish with remaining onions and scallions. Makes 4 to 6 servings.
