KOMPAS.com - Roti baguette adalah salah satu simbol kuliner ikonik Perancis. Roti yang bentuknya panjang dengan tekstur luar keras dan dalamnya lembut ini biasanya dijadikan pendamping makan sup.
Bahan roti baguette hanya tepung terigu, ragi, dan air. Roti baguette yang bagus mempunyai pori-pori di bagian dalamnya.

Bahan roti baguette (2 buah roti panjang)
1 bungkus ragi kering (sekitar 2 1/4 sdt)
300 ml air hangat suhu 38-43 derajat celsius
410 gram tepung terigu protein tinggi
1 sdt garam
Cooking spray (bisa diganti mentega atau margarin)
1 sdt tepung jagung

Campur ragi dan air hangat di mangkuk. Biarkan selama lima menit. Masukkan 2 3/4 bagian tepung terigu ke campuran ragi. Aduk perlahan sampai terbentuk adonan. Tutup adonan, biarkan selama 15 menit.
Siapkan meja bersih, taburi tepung dan garam secara merata. Letakkan adonan di atas meja. Uleni sampai garam menempel merata dan adonan lembut serta elastis. Lakukan proses ini selama enam menit. Tambahkan sisa tepung terigu satu sendok makan sampai habis.
Siapkan mangkuk yang telah dilumuri cooking spray. Pindah adonan ke dalam mangkuk, tutup. Biarkan mengembang selama 40 menit atau sampai dua kali lipat ukuran semula pada suhu 29 derajat celsius.
Pukul adonan perlahan. Tutup kembali dan biarkan mengembang lagi selama lima menit. Bagi adonan menjadi dua.
Ambil satu bagian adonan, lainnya biarkan tetap di dalam wadah tertutup kain. Gulung adonan menyerupai tali tebal sepanjang 30 sentimeter. Runcingkan sedikit ujung adonan. Lakukan proses ini pada satu bagian adonan yang tadi disimpan.
Siapkan loyang, taburi tepung jagung. Letakkan dua adonan roti baguette di atas loyang. Lapisi dengan cooking spray. Tutup, biarkan mengembang selama 20 menit atau sampai dua kali lipat ukurannya.
Panaskan oven sampai suhu 232 derajat celsius.
Ambil adonan, sayat permukaan adonan sebanyak tiga kali. Panggang adonan roti selama 20 menit pada suhu 232 derajat celsius atau sampai bawahnya kecoklatan. Angkat.
